  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 large eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8 or 9-inch square baking tin with parchment paper.
  2. Melt chopped dark chocolate and butter in a bowl using a microwave in 30-second intervals, stirring until smooth.
  3. Stir in brown sugar and granulated sugar until combined.
  4. Add eggs one by one, whisking well after each addition.
  5. Sift in flour and salt; gently fold until just combined.
  6. Pour batter into the prepared tin, smoothing the top. Bake for 25-30 minutes until done.
  7. Allow brownies to cool slightly, then poke holes on top and pour espresso over them.
