  • 2 Tbsp olive oil
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 1/2 cups heavy cream
  • 4 oz cream cheese (cubed)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded gruyere cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 tsp paprika (optional)

Instructions

  1. Preheat oven to 425°F. On a baking sheet lined with foil, toss cauliflower pieces with olive oil, salt, and pepper. Bake for 15-20 minutes until tender.
  2. In a large pot over low heat, combine heavy cream and cream cheese, whisking until smooth. Gradually add cheddar, gruyere, and Monterey Jack cheeses, stirring until melted. Mix in garlic powder, onion powder, and paprika.
