Thai Chicken Lettuce Wraps are a vibrant and flavorful dish that brings the taste of Thailand to your kitchen.   • 1 tablespoon sesame oil
  • ¼ cup yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 10 oz ground chicken
  • ¼ cup low-sodium Tamari (or soy sauce)
  • 2 tablespoons Thai sweet red chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup (or honey)
  • ⅓ cup cashews (chopped)
  • ¼ cup scallions (chopped)
  • ¼ cup cilantro (chopped)
  • ¼ to ½ cup carrots (shredded)
  • Sesame seeds (for topping)
  • 1 head butter lettuce (leaves separated)

Instructions

  1. Heat sesame oil in a skillet over medium-high heat. Sauté diced onions for 2-3 minutes until translucent, then add minced garlic and ginger; cook for an additional 2 minutes.
  2. Add ground chicken, season with salt and pepper, and cook until golden brown and no longer pink, about 3-4 minutes.
  3. In a small bowl, mix Tamari, Thai chili sauce, lime juice, and maple syrup. Pour this sauce over the cooked chicken along with chopped cashews. Stir well and reduce heat to low for another 2 minutes.
  4. Remove from heat and stir in shredded carrots, scallions, and cilantro.
  5. To serve, place a spoonful of the chicken mixture in each lettuce leaf and sprinkle with sesame seeds.
