  • 1½ cups granulated sugar
  • ¼ teaspoon salt
  • Zest of 1 large lemon
  • ½ cup unsalted butter (cold, cubed)
  • 3 large eggs (slightly beaten)
  • 4 cups fresh strawberries (halved)
  • 1 tablespoon fresh-squeezed lemon juice
  • 1 tablespoon cornstarch
  • ¾ cup sugar

Instructions

  1. Preheat the oven to 350°F. Line a 9×13 baking dish with parchment paper.
  2. In a stand mixer, combine flour, granulated sugar, salt, and lemon zest on low speed.
  3. Add cold butter and mix until pea-sized pieces form.
  4. Incorporate beaten eggs until a crumbly dough forms.
  5. Press ⅔ of the dough into the bottom of the prepared dish.
  6. In a bowl, mix strawberries, lemon juice, cornstarch, and sugar until combined.
  7. Pour strawberry mixture over the crust; spread evenly.
  8. Crumble remaining dough over the top.
  9. Bake for 45 to 50 minutes or until golden brown.
  10. Let cool completely before cutting into bars.
