  • 2/3 cup all-purpose flour
  • 1/3 cup salted butter (melted)
  • 1/2 tsp cinnamon
  • 2 1/2 cups peaches (peeled and sliced, about 3 medium peaches)
  • 1 cup sliced strawberries
  • 1/4 cup brown sugar (for fruit mixture)
  • 3 tsp cornstarch
  • 1/3 cup water
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). In a bowl, combine oats, brown sugar, flour, cinnamon, and melted butter until crumbly. Press half into a greased 9×9 inch pan.
  2. Layer the sliced peaches and strawberries over the crust.
  3. In a saucepan over medium-high heat, mix the additional brown sugar, cornstarch, salt, and water until thickened; stir constantly for about 2 minutes.
  4. Remove from heat and stir in vanilla. Pour syrup over the fruit layer.
  5. Crumble the remaining topping over the fruit.
  6. Bake for 35 minutes or until golden brown.
  7. (Optional) Broil on high for an additional 2-3 minutes to enhance crispiness.
