  • 1 lb ground beef or turkey
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 cup beef or vegetable broth

Instructions

  1. In a large skillet over medium heat, brown the ground beef or turkey for about 5-7 minutes. Drain excess fat and transfer to the slow cooker.
  2. Add kidney beans, black beans, crushed tomatoes, onion, garlic, bell pepper, chili powder, cumin, paprika, salt, black pepper, and broth to the slow cooker. Stir well to combine.
  3. Cover and set the slow cooker on low for 6 hours or high for 3 hours.
  4. About 30 minutes before serving, taste and adjust seasonings as needed.
  5. Serve in bowls with optional toppings.
