  • 1/3 cup vegetable oil
  • 5 cloves garlic (minced)
  • 1 cup grated Parmesan cheese
  • 1 Tbsp cornstarch
  • 2 tsp black pepper
  • 1.5 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/4 cup minced fresh cilantro

Instructions

  1. Preheat the oven to 400°F and line baking sheets with parchment paper.
  2. Slice each potato in half lengthwise, then cut into four wedges.
  3. In a large bowl, combine potato wedges, vegetable oil, and minced garlic; mix well.
  4. Add Parmesan cheese, cornstarch, black pepper, salt, onion powder, paprika, chili powder, and cilantro; mix until evenly coated using your hands.
  5. Spread wedges on prepared baking sheets skin-side down with space between each for even cooking.
  6. Bake for 15 minutes at 400°F. Lower the temperature to 375°F and bake for an additional 40 minutes or until golden brown and crispy.
