  • ½ cup unsalted butter (melted)
  • 1 cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • ¼ tsp salt
  • 1 Tbsp red food coloring
  • 1 tsp vanilla extract
  • ½ tsp distilled white vinegar
  • 2 large eggs
  • ¾ cup all-purpose flour (spooned & leveled)
  • 8 oz cream cheese (room temperature)
  • ¼ cup granulated sugar
  • ½ tsp vanilla extract
  • 1 large egg (room temperature)

Instructions

  1. Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper and grease the sides not covered with paper.
  2. In a large bowl, combine melted butter, sugar, cocoa powder, salt, red food coloring, vanilla extract, and vinegar. Mix well.
  3. Add eggs one at a time, mixing thoroughly after each addition. Stir in flour until just combined; set aside.
  4. In another bowl, beat cream cheese, sugar, and vanilla until smooth. Add egg and blend until combined; set aside.
  5. Reserve ½ cup of red velvet batter for topping. Pour remaining batter into the prepared pan and spread cheesecake batter evenly on top.
  6. Dollop reserved red velvet batter over cheesecake layer and swirl gently with a knife.
  7. Bake for 30 minutes or until a toothpick inserted comes out with moist crumbs. Cool completely before cutting into squares.
