  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces Italian sausage, crumbled
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28-ounce) can crushed tomatoes
  • 18 ounces refrigerated cheese and spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt to taste
  • Fresh cracked pepper to taste
  • Shaved Parmesan for garnish
  • Fresh chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add diced onion with a pinch of salt and pepper; sauté for 3-4 minutes until soft.
  3. Stir in minced garlic and Italian seasoning; sauté for another 30 seconds.
  4. Add crumbled sausage, cooking until browned and fully cooked.
  5. Mix in chicken broth, crushed tomatoes, and ravioli; season with salt and pepper.
  6. Bring to a simmer over medium-high heat; reduce heat to low and cook until ravioli is al dente (about 3-5 minutes).
  7. Stir in chopped spinach and heavy cream until the spinach wilts.
  8. Adjust seasoning with salt and pepper as needed. Garnish with Parmesan and parsley before serving.
