  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped pecans (for topping)
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves.
  3. In another bowl, combine pumpkin puree, milk, melted butter (or oil), and vanilla. Pour this mixture into the dry ingredients and stir until just combined. Transfer the batter to an 8-inch casserole dish.
  4. In a separate bowl, mix together the remaining granulated sugar, brown sugar, and chopped pecans. Evenly spread this mixture over the batter.
  5. Carefully pour the hot water over everything without stirring. Bake for approximately 40 minutes or until the center is set. Allow to cool for 5–10 minutes before serving. Enjoy with additional pecans and a scoop of vanilla ice cream.
