  • 1 medium onion, diced
  • 4 cups cooked pinto beans (or 2 cans, 15 oz each, drained and rinsed)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (4 oz) diced green chilies
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp ground cumin (optional)
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  2. Add the diced onion and sauté until softened, about 3–4 minutes.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper.
  4. Mix in pinto beans, diced tomatoes with green chilies, diced green chilies, and beef broth. Stir to combine.
  5. Bring the mixture to a boil; then reduce heat to simmer covered for about 30 minutes.
  6. Adjust seasoning to taste. For a thicker soup, mash some beans against the pot and stir.
  7. Serve hot in bowls topped with optional cilantro or lime wedges.
