  • 1/2 cup cornstarch
  • 1/4 tsp salt
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp peppermint extract
  • 2 Tbsp salted butter, softened
  • 2 Tbsp half and half
  • 1/4 tsp peppermint extract
  • 1 1/2 cups powdered sugar
  • 1/4 cup finely crushed peppermint bits or candy canes

Instructions

  1. Whisk together flour, cornstarch, and salt in a bowl; set aside.
  2. In a stand mixer, cream together softened butter and powdered sugar until smooth. Mix in peppermint extract.
  3. Gradually add the flour mixture on low speed until just combined. Chill dough for about an hour.
  4. Preheat oven to 350°F (175°C). Scoop tablespoon-sized portions of dough, shape into balls, and place on an ungreased baking sheet, spacing them apart.
  5. Bake until cookies are lightly golden, about 10-13 minutes. Cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
  6. For frosting, beat salted butter, half and half, peppermint extract, and powdered sugar until fluffy. Frost each cookie and immediately sprinkle with crushed peppermint bits before the frosting sets.
  7. Store cookies in an airtight container at room temperature.
