Ingredients

Scale
  • 1 1/2 cups fresh ripe peaches (cubed)
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream
  • 1 large egg (room temperature)
  • 6 tablespoons unsalted butter (softened)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar

Instructions

  1. Prepare the Peach Jam: Cook cubed peaches, brown sugar, and lemon juice over medium heat for 12-15 minutes. Mix cornstarch and water, stir into the jam, cook for an additional 2 minutes, then cool.
  2. Make the Dough: Combine flour, sugar, yeast, and salt in a mixer bowl. Add milk, cream, egg, vanilla, and tangzhong; knead until smooth. Incorporate softened butter gradually.
  3. Assemble the Rolls: Roll out dough, spread cinnamon-sugar mixture followed by peach filling. Cut into strips and roll each into a swirl. Place in a lined baking dish to rise for 1-2 hours.
  4. Bake: Preheat oven to 325 F. Prepare crumb topping by mixing flour, sugar, cinnamon, and melted butter; sprinkle over rolls and bake for 30-40 minutes.
  5. Prepare Cream Cheese Glaze: Blend cream cheese, butter, powdered sugar until smooth; whisk in heavy cream and drizzle over warm rolls.
