One Pot Macaroni Cheeseburger Soup is a delightful, family-friendly dish that combines the comforting flavors of cheeseburgers with the heartiness of macaroni soup.   • 1 lb ground beef
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 6 tbsp butter
  • 1 cup yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 4 tbsp flour
  • 8 cups chicken broth
  • 8 oz uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 oz sharp cheddar cheese, shredded
  • 1 tsp white balsamic vinegar
  • Kosher salt and fresh cracked pepper to taste
  • 4 sesame seed buns, diced into 1-inch pieces
  • 2 tbsp olive oil
  • Sliced green onion and shredded cheddar cheese for garnish

Instructions

  1. Preheat oven to 400°F. Spread bun cubes on a parchment-lined baking sheet, drizzle with olive oil, and bake for about 10 minutes until golden.
  2. In a large pot over medium heat, brown the ground beef with salt, pepper, and half the oregano and thyme. Remove and set aside.
  3. In the same pot, melt butter and sauté onions, carrots, celery, salt, and pepper for about 10 minutes.
  4. Add garlic and remaining herbs; cook for another minute. Stir in flour for one more minute.
  5. Deglaze with a splash of chicken broth; then add the remaining broth and uncooked macaroni. Simmer on medium-high until pasta is al dente (5–7 minutes).
  6. Stir in heavy cream and cheddar cheese until melted; mix in balsamic vinegar and return beef to pot. Heat through and season to taste.
  7. Serve topped with croutons, green onions, and extra cheese.
