Mexican Lasagna is a delightful layered casserole that brings together the vibrant flavors of Mexican cuisine in a comforting dish. This easy-to-prepare recipe features seasoned ground beef, black beans, and cheese, all nestled between soft corn tortillas.   • 1 pound ground beef
  • 1 medium yellow onion (diced)
  • 2 teaspoons minced garlic (2 cloves)
  • 1/4 cup taco seasoning (2 packets)
  • 1/2 cup water
  • 14.5 ounces fire roasted diced tomatoes (do not drain)
  • 4 ounces green chiles (1 can)
  • 15 ounces black beans (drained and rinsed)
  • 18 corn tortillas (divided)
  • 6 cups shredded jack and cheddar cheese (divided)
  • 1 medium tomato (diced for garnish)
  • 1 bunch green onions (sliced for garnish)
  • Sour cream (for serving)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and spray a 9×13 casserole dish with non-stick cooking spray.
  2. In a large skillet over medium heat, cook ground beef and diced onion until browned. Add minced garlic and sauté for an additional 1-2 minutes.
  3. Stir in taco seasoning and water; mix well.
  4. Add fire roasted tomatoes, green chiles, and black beans; heat through.
  5. Layer the bottom of the prepared dish with 6 overlapping corn tortillas.
  6. Spread one-third of the meat mixture over the tortillas, then sprinkle with 2 cups of cheese.
  7. Repeat layers two more times: tortillas, meat mixture, and cheese.
  8. Cover with aluminum foil and bake for 30-40 minutes until bubbly and cheese is melted.
  9. Garnish with diced tomatoes and green onions; let sit for 10 minutes before slicing.
  10. Serve with sour cream.
