  • 4 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F. In one bowl, combine breadcrumbs, half of the Parmesan cheese, Italian seasoning, salt, and pepper. In another bowl, whisk together eggs and milk. Place flour in a third bowl.
  2. Dredge each chicken breast in flour, dip into the egg mixture, then coat with the breadcrumb mixture.
  3. Heat olive oil in a skillet over medium heat and cook chicken for 3-4 minutes on each side until golden brown. Transfer the chicken to a baking dish.
  4. In a small bowl, mix remaining Parmesan with mozzarella and minced garlic; top the chicken with this mixture. Bake for 20-25 minutes or until the chicken is cooked through.
