  • 1 ball Easy pizza dough (or store-bought dough)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 5 oz fresh mozzarella (or ½ to cup shredded firm mozzarella)
  • 2 tablespoons grated parmesan cheese
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the pizza dough according to an easy no-knead recipe through step 5.
  2. If using fresh mozzarella, slice it into ½ inch thick pieces and dab off excess moisture with a paper towel.
  3. Shape the dough on parchment paper into a 9×13 inch rectangle; transfer it to a pizza peel or the back of a rimmed baking sheet.
  4. In a jar, combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper; shake well to emulsify.
  5. Create dimples in the stretched dough; drizzle the brine over it and add the mozzarella.
  6. Bake on a preheated pizza stone for about 8-10 minutes until golden brown.
  7. Once baked, top with additional lemon juice, parmesan cheese, parsley, and black pepper before slicing and serving hot.
