  • 1 cup dried chickpeas (soaked overnight)
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp baking soda
  • 1/4 cup flour (or gluten-free flour)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Drain and rinse soaked chickpeas.
  2. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, flour, lemon juice, salt, and pepper. Pulse until coarse.
  3. Transfer to a bowl and refrigerate for 30 minutes.
  4. Heat oil in a deep skillet or fryer to 180°C (350°F).
  5. Form mixture into balls or patties.
  6. Fry in batches until golden brown and crispy, about 3-4 minutes per side.
  7. Remove from oil and drain on paper towels.
  8. Serve hot with tahini sauce or in wraps with fresh vegetables.
