  • 2½ cups all-purpose flour
  • 1 tsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1½ cups granulated sugar
  • Zest of 3 small lemons (or 2 large lemons)
  • 1 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • ¼ cup granulated sugar for rolling (optional)

Instructions

  1. Preheat the oven to 375 F (190 C) and line a baking sheet with parchment paper.
  2. Melt the butter and cool it in the fridge for about 10 minutes.
  3. In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  4. In a large mixing bowl, combine sugar and lemon zest until wet sand consistency. Add cooled melted butter, egg, egg yolk, and vanilla; mix until smooth.
  5. Gradually stir in dry ingredients until just combined, then gently fold in blueberries.
  6. Scoop dough into balls using a medium cookie scoop (about 2 tablespoons). Roll in sugar if desired and place on the baking sheet about 3 inches apart.
  7. Bake for 10-12 minutes or until edges are set and lightly golden.
  8. Cool on the baking sheet for 3-4 minutes before transferring to a cooling rack.
