Ingredients

Scale
  • 1 cup dried lavender flowers

  • 4 cups water
  • 1 cup fresh lemon juice
  • 1/2 cup alcohol-free vanilla extract
  • 1/4 cup honey (optional)
  • Lemon slices for garnish

  1. In a saucepan, combine water, dried lavender, and sugar. Heat over medium until sugar dissolves. Bring to a boil, then remove from heat and let infuse for about 30 minutes.
  2. Strain the mixture through a fine mesh sieve to remove lavender flowers and let the syrup cool.
  3. In a large pitcher, mix cooled lavender syrup with fresh lemon juice, vanilla extract, and honey if desired. Add extra water to dilute to taste.
  4. Stir well and refrigerate for at least one hour to chill.
  5. Serve in glasses filled with ice, garnished with lemon slices and lavender flowers.
