  • 2 pounds beef short ribs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup coconut water
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large bowl, mix soy sauce, brown sugar, apple cider vinegar, coconut water, sesame oil, garlic, ginger, and gochujang until the sugar dissolves.
  2. Add beef short ribs to the marinade, coating well. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat grill or broiler to medium-high heat.
  4. Remove ribs from marinade and let excess drip off; reserve marinade for basting.
  5. Grill ribs for 5-7 minutes on each side, basting with reserved marinade until caramelized.
  6. Let ribs rest for a few minutes after cooking.
  7. Garnish with sesame seeds and sliced green onions before serving.
