Jack-O-Lantern Hand Pies are a whimsical and delicious treat perfect for Halloween gatherings.   • 2 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 8 oz unsalted butter (very cold, diced)
  • 69 tablespoons ice water
  • 1 egg (for egg wash)
  • 1/4 cup raw or turbinado sugar (for sprinkling)
  • 2 large honey crisp apples (peeled, diced small)
  • 3 tablespoons salted butter
  • 2 tablespoons bourbon whiskey
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. For the crust: In a stand mixer bowl, blend flour, sugar, and salt. Add cold butter and mix until crumbly. Gradually add ice water until dough forms. Divide into two discs, wrap in plastic, and refrigerate for at least one hour.
  2. For the apple filling: Sauté butter until golden; add apples and cook briefly. Stir in bourbon, vanilla, cinnamon, and brown sugar. Cook until syrupy; cool.
  3. For the blackberry filling: Roast blackberries on a baking sheet at 400°F for 30 minutes. Combine with sugar and vanilla in a pot; simmer until thickened; cool.
  4. Roll out the dough to 1/8 inch thick; cut out pumpkin shapes using a cookie cutter. Chill for 20 minutes.
  5. Preheat oven to 375°F. Assemble pies by placing one cutout without a face on the baking sheet; add filling, seal with another cutout featuring a face using an egg wash as glue.
  6. Bake for about 25 minutes until golden brown; cool on wire rack.
