  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together heavy cream, one egg, and one egg yolk; reserve the egg white. Chill this mixture in the freezer.
  3. In a food processor, pulse together flour, sugar, baking powder, chai spices, and salt. Add diced butter and pulse until mixture resembles coarse crumbs.
  4. Gradually add the chilled cream mixture until dough forms. Transfer to a floured surface, shape into a disc, and freeze for 30 minutes.
  5. Roll out dough to desired thickness (1 inch for full-size scones; ½ inch for mini) and cut into wedges or triangles.
  6. Brush scones with reserved egg white and bake for 20-22 minutes until golden brown.
  7. While baking, prepare the glaze by whisking powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  8. Once scones are baked and cooled slightly, dip tops into the glaze; allow it to set before serving.
