  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp unsalted butter (or 3 tbsp olive oil + 1 tbsp butter)
  • 1 large yellow onion, finely chopped
  • 5 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, shredded
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Peel and cube potatoes into ½-inch pieces. Rinse under cold water.
  2. In a large pot over medium heat, melt butter (or olive oil/butter mix). Sauté onion until softened (5-7 minutes), then add garlic and cook for another minute.
  3. Sprinkle flour over the mixture, stirring for about 2 minutes to form a roux.
  4. Gradually whisk in broth while scraping the bottom of the pot. Bring to a simmer.
  5. Add potatoes, stir well, cover, and simmer on medium-low for 15-20 minutes until tender.
  6. Blend half of the soup until smooth; return to pot.
  7. Stir in milk and heavy cream over low heat. Add herbs and heat through for 5 minutes without boiling.
  8. Remove from heat; gradually stir in cheddar cheese until melted.
  9. Season with salt and pepper to taste. Serve hot with optional garnishes.
