  • 1.5 lbs boneless, skinless chicken breasts
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cups shredded mozzarella cheese
  • 1.5 cups marinara sauce
  • 1 cup unseasoned whole wheat bread crumbs
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Butterfly and pound chicken breasts to about ¼ inch thick.
  3. Set up three shallow bowls: one with flour, one with whisked eggs, and one combining bread crumbs, Parmesan, pepper, basil, and parsley.
  4. Dredge each chicken cutlet in flour, dip in egg, then coat in the breadcrumb mixture.
  5. Arrange breaded cutlets on the baking sheet and bake for 30 minutes (flipping halfway).
  6. After baking, top each cutlet with marinara sauce and mozzarella cheese, then broil for about 2 minutes until cheese melts.
