  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1/2 red onion, cut into chunks
  • 1 cup pineapple chunks
  • 1/2 cup Primal Kitchen Foods Hawaiian BBQ Sauce
  • 1 tbsp avocado oil
  • 1/4 tsp salt
  • Juice of 1 lime
  • Fresh cilantro and white sesame seeds for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine chicken with salt, pepper, and avocado oil.
  3. Add diced bell peppers, red onion, and Hawaiian BBQ sauce; mix until well-coated.
  4. Spread the mixture on the prepared baking sheet and bake for 20 minutes.
  5. Add pineapple chunks to the sheet pan and return to the oven for an additional 10-20 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Drizzle lime juice over the dish and garnish with cilantro and sesame seeds before serving.
