  • 1 lb ground lamb (or beef)
  • ¼ cup minced onion
  • 3 cloves garlic (minced)
  • 1 large egg
  • ½ cup crumbled feta cheese
  • 1 tsp Greek seasoning
  • 1 cup plain yogurt (drained)
  • 2 cups cooked rice (white or brown)
  • Juice of ½ lemon
  • 1 cup diced tomato
  • 1 cup diced cucumber

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper and lightly spray it.
  2. In a bowl, combine ground lamb, onion, garlic, egg, feta, Greek seasoning, and salt. Mix until blended.
  3. Roll mixture into meatballs and place on the prepared baking sheet. Bake for 10-14 minutes until browned.
  4. For tzatziki, mash garlic with salt; mix with drained cucumber, yogurt, mint/dill, pepper, and olive oil.
  5. Combine cooked rice with lemon juice and salt in a bowl.
  6. Assemble bowls: place rice in each bowl and top with meatballs, tzatziki, cucumber salad (tomato and cucumber mixed), and optional garnishes.
