  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon Gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. In a large cast iron skillet over medium heat, add olive oil and two tablespoons of ghee. Once melted, add potatoes with garlic, thyme, oregano, salt, and pepper. Cook for 8-10 minutes until golden brown and fork-tender, stirring frequently.
  2. Increase heat to medium-high; add the remaining ghee. Once melted, add steak pieces seasoned with salt and pepper. Sear for at least 2 minutes without stirring to achieve a good crust. Stir and cook until golden brown (about another 1-2 minutes).
  3. Return potatoes to the pan; stir to combine. Adjust seasoning as needed and garnish with freshly chopped parsley. Serve warm.
