  • ½ cup full-fat cottage cheese
  • ¼ tsp cream of tartar
  • 1 tbsp almond flour (optional)
  • 1 tbsp coconut flour (optional)
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp olive oil or melted butter
  • Sesame seeds, chia seeds, or poppy seeds (optional for topping)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat egg whites with cream of tartar until stiff peaks form.
  3. In another bowl, mix egg yolks with cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil until smooth.
  4. Gently fold the egg whites into the yolk mixture without overmixing.
  5. Drop spoonfuls of the mixture onto the baking sheet and shape them into rounds about ½ inch thick.
  6. Sprinkle with seeds or herbs if desired.
  7. Bake for 25-30 minutes until golden and firm.
  8. Cool completely on a wire rack before serving.
