  • 1 pound lean ground beef (90% lean recommended)
  • 1/4 cup diced yellow onion
  • 1/2 medium diced bell pepper
  • 1 teaspoon cumin
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 cup Mexican blended cheese
  • 1 egg

Instructions

  1. Preheat the oven to 350°F and prepare a cookie sheet with parchment paper or oil.
  2. In a large skillet, cook the ground beef, onions, and bell pepper until the beef is browned and the vegetables are soft. Drain excess fat.
  3. Stir in cumin, garlic, salt, pepper, and chili powder; cook for another 2 minutes.
  4. Roll out the pie crusts and cut into circles using a bowl as a guide. Aim for about eight circles total.
  5. Place each circle on the cookie sheet, add 2–3 tablespoons of filling and sprinkle with cheese.
  6. Fold each circle in half and seal edges with a fork.
  7. Brush tops with beaten egg and bake for 12–15 minutes until golden brown.
