  • 2 ½ cups white whole wheat or all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • ¼ tsp kosher salt
  • 1 cup warm water or warm milk
  • 2 tsp honey
  • 7 tbsp salted butter, room temperature
  • ¼ cup granulated sugar
  • 3 tsp cinnamon
  • ½ cup brown sugar
  • 1 cup powdered sugar
  • 2 tbsp cream cheese, room temperature
  • 1 tsp pure vanilla extract

Instructions

  1. In a stand mixer bowl, combine flour, yeast, and salt. Add warm water or milk, honey, and 1 tbsp butter. Knead until smooth (1-2 minutes), adding flour as needed. Cover and let rise for 30 minutes to 1 hour.
  2. Preheat oven to 375°F and line a baking sheet with parchment paper.
  3. Mix granulated sugar and cinnamon in a bowl.
  4. Roll out the dough on a floured surface into a rectangle (about ¼ inch thick). Spread with remaining butter and sprinkle with cinnamon sugar. Fold in half and cut into strips; twist each strip into knots and place on the baking sheet.
  5. Melt the remaining butter; mix with brown sugar and remaining cinnamon. Spoon over knots.
  6. Bake for 8-10 minutes, then spoon any melted brown sugar back over knots before returning to the oven for another 8-10 minutes until golden.
  7. For the glaze: beat together powdered sugar, cream cheese, vanilla, and water until smooth; adjust consistency as needed.
  8. Drizzle glaze over knots before serving.
