  • 2 1/4 cups finely ground graham crackers
  • 2 tablespoons sugar
  • 1/4 teaspoon ground cinnamon
  • 10 tablespoons melted butter
  • 3 (8 oz) packages cream cheese, room temperature
  • 1 cup sugar
  • 3 large eggs, room temperature
  • 1/2 cup dulce de leche, room temperature
  • 2 teaspoons vanilla extract
  • 2/3 cup dulce de leche (for topping)
  • 3 tablespoons heavy whipping cream
  • Fleur de Sel (for garnish)

Instructions

  1. Preheat oven to 350°F. Coat a 13 x 9 x 2-inch baking pan with nonstick spray.
  2. In a bowl, mix graham cracker crumbs, sugar, and cinnamon. Stir in melted butter until combined. Press the mixture into the bottom of the pan and bake for about 10 minutes until golden. Let cool.
  3. Blend cream cheese and sugar in a food processor until smooth. Add dulce de leche and blend well. Incorporate eggs one at a time, followed by vanilla.
  4. Spread the filling over the cooled crust and bake for about 38 minutes until edges are puffed but center is slightly firm.
  5. Mix remaining dulce de leche with heavy cream; microwave until melted and pour over the cheesecake. Chill for at least one hour before cutting into bars.
  6. Cut into 24 bars and sprinkle with fleur de sel just before serving.
