  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 5 chicken cutlets
  • ⅓ cup all-purpose flour
  • 2 eggs
  • ¾ cup panko crumbs
  • 2 romaine hearts (chopped)
  • 2 French baguettes

Instructions

  1. Prepare the Caesar dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, garlic, Parmesan cheese, black pepper, and salt until smooth. Reserve some dressing for later and mix the rest with chopped romaine; refrigerate both.
  2. Pound chicken cutlets to an even thickness and season with salt and pepper.
  3. Set up a breading station: mix flour with smoked paprika; whisk eggs; combine panko, breadcrumbs, parsley, garlic powder, Parmesan cheese, and seasoning in a third plate.
  4. Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in flour, dip in eggs, then coat in breadcrumb mixture before frying until golden brown on both sides (4–5 minutes per side).
  5. Slice baguettes open lengthwise; spread reserved Caesar dressing inside. Layer with crispy chicken cutlet and Caesar salad mix. Sprinkle additional Parmesan before serving.
