  • 2 large boneless/skinless chicken breasts
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp butter (melted)
  • 12 tbsp olive oil
  • 10.5 oz cream of chicken soup
  • 1.5 cups milk
  • 1 cup sour cream (at room temperature)
  • 0.5 tsp onion powder
  • 1 oz packet Ranch seasoning mix

Instructions

  1. Slice chicken breasts into thinner pieces (about ½ inch thick) and pound if necessary. Season both sides with Italian seasoning, salt, and pepper; brush one side with melted butter.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, combine cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning over medium heat. Stir until combined and let simmer for 5 minutes.
  4. Return chicken to the skillet, spoon sauce over it, cover partially, and let heat through for about 10 minutes.
  5. Serve with baked potatoes topped with the extra sauce if desired.
