  • ½ pound Penne pasta (about 2 1/2 cups dry)
  • 1 tablespoon Olive oil
  • 2 Garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • 1 pound Boneless skinless chicken breast (cut into bite-sized chunks)
  • Salt and pepper (to taste)
  • 2 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 1 cup Chicken broth
  • 1 cup Half and half
  • ½ cup Freshly grated Parmesan cheese
  • 1 cup Freshly shredded Mozzarella cheese
  • ½ cup Basil pesto (or more, to taste)
  • Fresh basil (for garnish)

Instructions

  1. Boil the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Add minced garlic, Italian seasoning, and diced chicken. Season with salt and pepper; cook until chicken is no longer pink. Transfer the chicken to a plate and discard excess liquid.
  3. In the same skillet, melt butter over medium heat. Whisk in flour and cook until golden, about 3 minutes.
  4. Gradually whisk in chicken broth and half & half; bring to a boil, then reduce heat and simmer for about 5 minutes until the sauce thickens.
  5. Remove from heat; stir in pesto and cheeses gradually to avoid clumping. Add cooked pasta and chicken; mix well to coat.
  6. Garnish with fresh basil and cracked black pepper before serving.
