  • 2 large chicken breasts (boneless, skinless)
  • 8 oz linguine pasta
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • Freshly grated Parmesan cheese, for garnish

Instructions

  1. Pat chicken dry and season with salt, pepper, smoked paprika, onion powder, and red pepper flakes. Heat 2 tablespoons of butter in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown; set aside.
  2. Boil salted water in a pot; cook linguine according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
  3. In the same skillet, melt remaining butter over medium heat. Sauté garlic, parsley, and thyme for 1-2 minutes. Add chicken broth and lemon juice; simmer for 2-3 minutes.
  4. Slice cooked chicken and add drained linguine to the sauce; toss together, adding reserved pasta water to achieve desired consistency. Gently fold in sliced chicken.
  5. Serve on plates topped with grated Parmesan cheese and garnish with additional parsley and thyme.
