  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 2 tsp cinnamon

  • 5 Tbsp unsalted butter, softened
  • 1 1/4 cups all-purpose flour, spooned and leveled
  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 8 Tbsp cold unsalted butter, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp unsalted butter, melted
  • 3 Tbsp heavy cream or milk
  • 1 cup powdered sugar, sifted

Instructions

  1. Prepare the streusel filling by mixing together flour, brown sugar, cinnamon, and salt in a medium bowl. Work in softened butter until clumps form. Refrigerate.
  2. Preheat oven to 400°F and line two baking sheets with parchment paper.
  3. In a large bowl, combine all-purpose flour, cake flour, cornstarch, cinnamon, baking soda, baking powder, and salt; set aside.
  4. Cream together cubed butter and sugars in a stand mixer until smooth. Add egg, egg yolk, and vanilla; mix well.
  5. Gradually add dry ingredients to the wet mixture until incorporated.
  6. Roll cookie dough into about eight large balls (or smaller for more cookies) and place on prepared sheets.
  7. Indent each ball with your thumb; fill each with about one tablespoon of streusel.
  8. Bake for 8 to 11 minutes or until golden at the edges; let cool slightly before transferring to a rack.
  9. For icing, whisk together powdered sugar, melted butter, heavy cream or milk, vanilla extract, and pinch of salt; drizzle over cooled cookies.
