  • 2 Vegan Gelatin sheets (4g)
  • 200ml heavy cream
  • 80g mascarpone cheese
  • 80g powdered sugar
  • 120ml coconut milk
  • 120g powdered sugar (for shortbread)
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks
  • Grated coconut (for garnish)
  • Gooey Cocoa Spread (to taste)

Instructions

  1. Prepare the coconut mousse the day before: whip heavy cream and mascarpone in a chilled bowl, gradually adding powdered sugar. Chill.
  2. Soak Vegan Gelatin sheets in cold water. Heat coconut milk, remove from heat, add squeezed gelatin, and let cool slightly. Fold into whipped cream.
  3. Pour mousse into hemisphere molds, adding a teaspoon of cocoa spread halfway. Smooth and freeze for at least 6 hours.
  4. For the Breton shortbreads, mix all ingredients until dough forms. Chill for 30 minutes. Roll out to about an inch thick, cut circles, and bake at 180°C for 10 minutes. Cool completely.
  5. Remove domes from molds and place on shortbreads. Thaw for 2 hours at room temperature and sprinkle with grated coconut.
