  • 1 1/2 cups cake flour
  • 2 tsp corn starch
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup cold unsalted butter, cubed
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup packed brown sugar
  • 6 Tbsp softened butter
  • 2 Tbsp cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners' sugar

Instructions

  1. Preheat the oven to 400°F. In a bowl, mix brown sugar, softened butter, and cinnamon to create the filling.
  2. Combine all dry ingredients in a large bowl and set aside.
  3. In a stand mixer, cream the cubed butter until smooth, then add granulated sugar until well combined.
  4. Incorporate eggs and vanilla extract; mix well.
  5. Gradually blend in dry ingredients.
  6. On a floured surface, shape the dough into a rectangle and spread the filling evenly over it.
  7. Roll the dough tightly from one long edge and cut into about 10-12 equal pieces.
  8. Shape each piece into balls and bake for 9-11 minutes until lightly golden.
  9. Allow cooling before making frosting by mixing cream cheese, softened butter, confectioners' sugar, vanilla extract, and salt until smooth.
  10. Frost cooled cookies and enjoy!
