  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 1 tsp cornstarch
  • 1/4 cup light soy sauce
  • 1 tsp sesame oil
  • 2 tsp sugar (or honey)
  • 1 tbsp rice vinegar (optional)
  • 3 cloves garlic, smashed
  • 1 tbsp cooking oil
  • 1 medium zucchini, sliced
  • 1 tbsp oyster sauce
  • Ground black pepper (optional)

Instructions

  1. Marinate the chicken: In a bowl, combine chicken with cornstarch, soy sauce, sesame oil, sugar, rice vinegar (if using), and garlic. Let it marinate for 30 minutes.
  2. Heat oil in a pan or wok over medium-high heat.
  3. Stir-fry the marinated chicken for about 2 minutes until no longer translucent. Remove from heat and set aside.
  4. Add more oil if needed and stir-fry zucchini for about 5 minutes until tender.
  5. Return the chicken to the pan, add oyster sauce and pepper (if desired), and stir-fry for an additional 2-3 minutes until everything is cooked through.
  6. Serve hot over rice or noodles!
