  • 1 1/4 cups whole milk (300 ml), warmed
  • 2 1/4 tsp active dry yeast
  • 4 3/4 cups all-purpose flour (593 g)
  • 1/2 cup unsalted butter (112 g), softened (for dough)
  • 1 cup light brown sugar (220 g), packed (for filling)
  • 6 oz cream cheese (170 g), softened
  • 3/4 cup powdered sugar (97 g)

Instructions

  1. Bloom the yeast by mixing it with warm milk and sugar; let sit for 10 minutes until foamy.
  2. In a mixer, combine flour, spices, salt, and sugar. Add eggs, vanilla, and butter; mix well.
  3. Incorporate the yeast mixture and knead until smooth. Let rise in a greased bowl for 1 to 1½ hours.
  4. Prepare the chai caramel sauce by steeping chai tea bags in warm heavy cream; mix with browned butter and sugar.
  5. Make the filling by mixing softened butter, brown sugar, spices, and salt.
  6. Roll out the dough into a rectangle, spread filling evenly, roll tightly, and slice into rolls.
  7. Place rolls in a greased pan with caramel sauce; pour cream between them. Let rise for another hour.
  8. Preheat oven to 350°F (175°C) and bake for 29-32 minutes until golden.
  9. Frost warm rolls with whipped cream cheese frosting after cooling slightly.
