  • 1 lb mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tbsp olive oil
  • 6 tbsp butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded Parmesan cheese
  • 4 tbsp blackened seasoning, divided
  • Salt and pepper to taste

Instructions

  1. Pound chicken to an even 1/4 inch thickness and rub with olive oil. Season both sides with blackened seasoning.
  2. Heat a skillet over medium-high heat and add 2 tbsp olive oil. Cook chicken for 3-4 minutes until dark amber on one side, then flip.
  3. Reduce heat to low, add 2 tbsp butter and minced garlic, cooking for another 5-6 minutes until the chicken reaches an internal temperature of 165°F.
  4. Remove the chicken and let it rest under tented foil.
  5. In the same skillet, melt remaining butter and sauté the remaining garlic for 1-2 minutes.
  6. Stir in heavy cream and 2-3 tsp blackened seasoning; bring to a simmer and thicken for about 5 minutes.
  7. Cook noodles to al dente, reserving 1/3 cup pasta water.
  8. Add Parmesan to the sauce, stirring until melted. Adjust seasonings as needed.
  9. Mix reserved pasta water into the sauce, combine with cooked noodles, and top with sliced chicken. Optionally sprinkle additional Cajun seasoning before serving.
