BBQ Chicken Potato Skillet is a quick and satisfying dinner that brings the whole family together in just 30 minutes. This one-pan meal combines succulent chicken, crispy potatoes, and rich BBQ flavor, all topped with melty mozzarella cheese. It’s perfect for busy weeknights when you want something delicious without the fuss.

  • 2 chicken breasts, cubed
  • 5 small/medium potatoes, peeled and cubed
  • 2 tbsp olive oil
  • Salt, to taste (about 1/2 tsp)
  • Pepper, to taste (about 1/2 tsp)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp butter
  • 1 tbsp minced garlic
  • 1/2 cup BBQ sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your air fryer to 400°F (200°C). Toss cubed potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  2. Air fry the seasoned potatoes for about 20-25 minutes, shaking occasionally.
  3. Meanwhile, heat butter in a skillet over medium-high heat. Add cubed chicken and season with salt, pepper, paprika, ranch seasoning, and onion powder.
  4. Cook until chicken is no longer pink. Stir in minced garlic and BBQ sauce.
  5. Combine cooked potatoes with the chicken mixture in the skillet. Top with shredded cheese.
  6. Broil for a few minutes until cheese melts or cover on the stove until melted.
  7. Drizzle with additional BBQ sauce before serving.
