  • 2 large chicken breasts (about 1 lb)
  • 1 tsp olive oil
  • ½ tsp dried oregano
  • ¼ tsp dried tarragon
  • ¼ tsp salt
  • 2 flatbreads (about 8 inches each)
  • ½ cup BBQ sauce
  • 2 garlic cloves, minced
  • 1 cup mozzarella cheese, shredded
  • 1 small red bell pepper, chopped
  • ¼ cup red onion, sliced
  • 2 Tbsp cilantro, chopped
  • 2 Tbsp red pepper flakes (optional)
  • 3 Tbsp grated parmesan cheese (optional)

Instructions

  1. Pat the chicken dry and cut larger breasts in half. Combine olive oil, oregano, tarragon, and salt; rub onto both sides of the chicken.
  2. In a skillet over medium-high heat, cook the chicken for about 8-10 minutes per side until fully cooked (internal temperature of 165°F). Let it rest before slicing into bite-sized pieces.
  3. Preheat the oven to 375°F. Place flatbreads on a baking sheet and brush generously with BBQ sauce. Sprinkle minced garlic over the sauce.
  4. Layer mozzarella cheese, cooked chicken, red onion, and chopped bell pepper on top of the flatbreads. Bake for 10-15 minutes until the edges are golden and the cheese is bubbly.
  5. Remove from oven and let cool slightly before adding cilantro and more BBQ sauce. Slice into pieces and serve.
