Baked Elote Dip is a delightful Mexican-inspired appetizer that combines creamy cheese, sweet corn, and zesty spices for an irresistible dip.   • 1 teaspoon extra virgin olive oil
  • 6 whole scallions (thinly sliced, with dark green portions reserved)
  • 16 ounces frozen corn kernels (or 3 cups fresh)
  • 1 teaspoon Tajin or Trader Joe's Everything but the Elote Seasoning Blend
  • 4 ounces ⅓-less-fat cream cheese
  • ¼ cup light sour cream
  • 7 ounces Cotija cheese (grated, about 1¾ cups)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat the oven to 350°F and adjust oven racks.
  2. In a 10-inch ovenproof skillet, heat olive oil over medium heat. Add white and light-green parts of scallions and salt; sauté until softened (2-3 minutes).
  3. Add corn and seasoning; cook until soft (3-5 minutes). Stir in cream cheese until fully blended.
  4. Remove from heat; fold in sour cream and ¾ cup Cotija. Bake for 10-12 minutes until bubbling.
  5. Preheat broiler; sprinkle remaining Cotija on top and broil for 2-3 minutes until golden brown.
  6. Garnish with reserved scallion greens and cilantro. Serve immediately.
