Arroz Mexicano, or Mexican rice, is a vibrant and flavorful side dish that pairs perfectly with your favorite Mexican meals. Ready in under 30 minutes, this dish features fluffy rice infused with a rich tomato sauce, making it a delightful addition to any table.

  • 2 tomatoes (quartered)
  • 1/4 onion (quartered)
  • 1 garlic clove
  • 1 cup water
  • 1 tbsp chicken bouillon
  • 1/8 cup olive oil
  • 2 cups long grain white rice
  • 1/4 onion (finely diced)
  • 1 garlic clove (finely minced)
  • 1 tbsp chicken bouillon
  • pinch whole cumin
  • 1 1/2 cups water

Instructions

  1. In a pot, combine tomatoes, onion, and garlic with 4 cups of water; boil until tomatoes are soft (about 4-5 minutes). Let cool.
  2. Blend the mixture with 1 cup of water and bouillon until smooth; set aside.
  3. Heat oil in a large stockpot over medium heat; add rice and stir constantly for about 5 minutes until lightly toasted.
  4. Add finely diced onion and continue stirring for another 4 minutes until rice turns golden.
  5. Stir in minced garlic, chicken bouillon, cumin, water, and the tomato sauce; mix well.
  6. Cover and cook for 12 minutes on medium heat. Turn off the heat and let it rest for an additional 5 minutes with the lid on.
  7. Uncover, fluff with a fork, and serve.
