  • ½ cup softened butter (salted)
  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ⅓ cup sugar (for cinnamon mixture)
  • 1 ½ teaspoons cinnamon
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350ºF and grease a 9X5 loaf pan.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy (2-3 minutes).
  3. Mix in the egg, vanilla extract, and buttermilk until combined.
  4. Sift flour and baking soda into the mixture; stir until just combined.
  5. In a separate bowl, mix together the cinnamon and ⅓ cup of sugar.
  6. Pour half the batter into the prepared loaf pan; sprinkle half of the cinnamon sugar on top and swirl with a knife.
  7. Add remaining batter on top, smooth it out, then sprinkle with remaining cinnamon sugar and swirl again.
  8. Drizzle melted butter over the top.
  9. Bake for 50-70 minutes or until a toothpick comes out clean from the center.
  10. Cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
