  • 3 tablespoons all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup panko breadcrumbs
  • ¼ cup grated parmesan cheese
  • 1 large zucchini (sliced ⅓-inch thick)

Instructions

  1. In a shallow dish, whisk together eggs, flour, salt, and black pepper.
  2. In another dish, combine panko breadcrumbs and parmesan cheese.
  3. Dip each zucchini slice in the egg mixture, then press it into the breadcrumb mixture. Place on a baking sheet.
  4. Preheat the air fryer to 400°F. Arrange half the zucchini slices in a single layer, spray with oil, and air-fry for 5-7 minutes. Flip the slices, spray with more oil, and air-fry for another 5-7 minutes until golden brown and crispy. Repeat with the remaining slices.
